Diane\'s home-made toasted muesli

This muesli works out at $2.60 per 500g using generic oats, sultanas and apricots. This is cheaper than most of the branded mueslis around but a little pricier than generic or house brands.

Ours, however, has a higher percentage of dried fruit in it which makes it very good value. We didn't add nuts because we wanted to keep the price down, but feel free to add them (toasting them gives more flavour). Enjoy it for breakfast with milk and fresh seasonal fruit or use some to make our delicious muesli slice. Or make some and ‘gift wrap' it for presents.

Home-made toasted muesli
Makes about 9 cups
Prep: 15 minutes
Cooking: 20 minutes

6 cups traditional rolled oats (not instant)
1/3 cup honey

1 tablespoon sunflower or canola oil
1/2 cup shredded coconut
3/4 cup sultanas
1/2 cup chopped Turkish apricots
1/2 cup chopped dates
1/2 cup chopped dried apple
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/4 cup wheat germ

Preheat oven to 200ºC (400ºF).

Place the oats in a large bowl. Heat the honey in a small microwave proof bowl until runny (a few seconds on medium), mix in the oil and then pour this mix into the oats and mix well.

Spread the oats out on two trays lined with baking paper and bake for 15 minutes or until golden in the preheated oven, stirring every 5 minutes and swapping trays. Place in a large bowl and leave to cool.

Place coconut on one of the trays and cook for 2 minutes, then stir and cook for another minute until browned. Add to the oats.

When the oat mix is cool, tip in the remaining ingredients, stir quickly to combine and store in a sealed container.
