Yoghurt cherry parfait

To crush biscuits, place in a plastic bag and use a rolling pin or meat mallet to crush them. If they are on special, toast some almonds flakes or slivers and mix with biscuit crumbs. You need four 1 cup serving glasses for this. A small drinking glass will do.
Preparation time: 15 mins
Serves 4 @ $1.25 per serve

1 1/2 cups Greek-style yoghurt (reduced fat if you wish)
1/4 teaspoon ground cinnamon
3 tablespoons honey
1 cup drained sour pitted (Morello) cherries
4 plain biscuits (e.g. Milk Coffee), crushed

Combine the yoghurt, cinnamon and honey in a large bowl and mix well until smooth. Place 2 tablespoons of the yoghurt mixture in the base of each of the serving glasses and top with a few cherries (using half the cherries at this stage). Sprinkle a heaped teaspoon of biscuit crumbs over the cherries in each glass.

Repeat layering with 1 tablespoon yoghurt, the remaining cherries and a heaped teaspoon of biscuit crumbs. Then spoon over remaining yoghurt and top with remaining biscuit crumbs. Chill until ready to serve.
