Banana Split
Ring the changes with seasonal fruits - adding sliced strawberries when they are at their best. Use low-fat ice cream if you prefer and whatever flavour you have on hand.
Serves 2 @ $1.45 per serve
Preparation time: 5 mins
2 bananas
squeeze of fresh lemon, lime or orange juice
2 scoops vanilla ice-cream (low fat if you prefer)
1 passionfruit, halved
2 teaspoons toasted flaked almonds, optional
1/2 teaspoon hundreds and thousands, optional
Peel and slice the banana in half lengthwise or cut into slices on the diagonal, tossing in the juice (whichever flavour you wish) to stop banana from going brown.
Arrange the banana in serving dishes, top with a scoop ice cream and drizzled over the passionfruit. If you like, top with a sprinkle of nuts or 100s and thousands.
