Chocolate Mousse

4-ingredient Chocolate Mousse

Making this delicious treat in individual moulds means everyone gets their fair share while using dark chocolate delivers a healthy dose of antioxidants.

Serves 4.

100g 70% dark chocolate, chopped
2 tbs water
10g unsalted butter
3 eggs, separated

Bring a small quantity of water to the boil in a small saucepan, place a heatproof bowl firmly on top of the saucepan, add the chocolate, water and butter and stir until melted. Remove the bowl from the saucepan. Add the egg yolks to the chocolate mixture one at a time, stirring constantly.

Whisk the egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture. Spoon the mixture into four ¾-cup capacity moulds. Refrigerate for 3 hours, or until set.
