Muesli Slice
This chewy muesli slice is full of goodness. It also works out much cheaper (about 30 cents per slice) than the muesli bars that you buy (around 70-90 cents each). Think of the school lunchbox savings! And the packaging you are saving from landfill, too.
Makes 16 slices
Preparation: 10 minutes
Cooking: 25 minutes
3 cups home-made toasted muesli
1/2 cup plain flour
1/3 cup firmly packed brown sugar
1/4 cup honey
60 g butter, melted
2 eggs, beaten
Preheat the oven to 180ºC (350ºF). Line a 30 cm x 20 cm slice pan with baking paper.
Combine the muesli and flour in a large bowl.
Combine the sugar, honey and butter in a small saucepan and stir until melted and smooth. Tip into the muesli, add the eggs and stir until well combined. Spoon into pan, pressing down mixture and smooth surface.
Bake for 25 minutes or until golden (it may be soft - don't worry it will harden as it cools). Leave in pan to cool and then cut into 16 slices. Store in a sealed container for a few days or freeze for longer.
